We have an immediate opening for a Commissary Kitchen Manager to join our dynamic team! This position will have a team of direct reports and will report to the Chief Operating Officer.
Responsibilities as a Supervisor:
Actively identify emerging talent with a strong commitment to train and develop their team.
Interview, hire, train, recommend performance evaluations, resolve problems, provide open communication, perform annual reviews, and recommend discipline and/or termination when appropriate.
Maintain a positive working relationship with all company employees. Promote a cooperative and fair working environment to maximize employee morale, productivity, and efficiency.
Demonstrate a commitment to delivering high level internal/external guest service; proven leadership and change leadership skills; ability to build, develop, and motivate teams

Responsibilities & Duties:
Provide active supervision of culinary production and the commissary team.
Ensure food quality, quantity, freshness, and presentation meet Haymarket standards.
Maintain high productivity levels and ensure kitchen schedules are kept within budget.
Responsible for catering production.
Execute food and beverage production according to Haymarket approved recipes.
Ensure proper packaging, labeling, rotation, and delivery of all prepared foods to retail outlets.
Document waste and spoilage using appropriate forms; meet all spoilage targets.
Arrive to workstation on time, appropriately groomed, dressed and ready to work; work all scheduled shifts and attend required trainings and meetings.
Maximize sales potential through effective and proper procedures for prepping, storing, and rotating product.
Collaborate with R&D team for continued development of high-quality recipes.
Perform a variety of administrative tasks for inventory and ordering.
Follow and ensure compliance with established procedures, including weights and measures, health and sanitation, and safe work practices.
Ensure food production meets and exceeds all state and local food code standards as well as Hazard Analysis Critical Control Points (HACCP) standards.
Maintain and ensure maintenance of a clean and sanitary work environment; maintain equipment in accordance with Haymarket cleanliness and safety standards; ensure walk-ins and freezers are clean and organized.
Perform opening, mid, and closing duties as assigned; ensure accuracy of product pricing.
Immediately report safety hazards and violations.
Perform other duties as assigned by Haymarket leadership.
Experience in food production commissary a plus including, but not limited to:Modified Atmosphere Packaging (MAP)
Packaging and labeling
Logistics of daily deliveries
Strong knowledge of ingredients and cooking techniques.
Analytical ability and proficiency in math; ability to scale recipes, calculate margins, monitor profitability, and manage inventory.
Basic computer skills including MS Word and Excel.
Strong to excellent communication skills and willingness to work as part of a team.
Ability to deliver information in a clear and respectable manner to fellow team members, customers, and vendors.
Ability to meet customer service expectations and standards in all interactions with customers, vendors, and team members.
Ability to follow directions and procedures, effective time management and organization skills.
